What about HEIF files, are they the same thing?

Near enough, and they convert here identically. HEIF is the container format; HEIC is that container with the picture stored as HEVC, which is what an iPhone writes. Some cameras and export tools name the same kind of file .heif instead, so heif to jpg is the same job as heic to jpg and both extensions are accepted. While we are on names: heic to jpeg means the same thing as heic to jpg, since JPG and JPEG are two spellings of one format. The type is read from the bytes rather than the name either way, so a photo called .jpg that is really a HEIC inside still converts properly.

Does this upload my photos anywhere?

No, and there is no server here that could receive them. Your photos are decoded and written back out by your own browser, on your own machine. If you would rather check than take that on trust, open your browser's network tab while you convert: the first HEIC makes the page fetch its decoder, and after that nothing goes out at all. Your photo is never part of a request.

Will converting HEIC to JPG lose quality?

A little, and it is worth being straight about why. JPEG is a lossy format, so writing one always throws some detail away. At the default quality of 92 that loss is not visible at normal viewing sizes, and you can push the setting to 100 if you want as little of it as possible. If you want the conversion without losing quality at all, choose PNG, which keeps exactly what came out of the decoder. Either way, the original HEIC on your device is left untouched.

Does the converted photo keep the date it was taken, and the location?

That is your call, and it is the one setting worth reading before a big batch. An iPhone writes the capture date, the camera, the exposure and the coordinates of where you were standing into every photo. The setting here defaults to keeping the details and dropping the coordinates, which is usually what you want before photos go anywhere public. "Keep everything" carries the location across as well, and "Remove all of it" hands back the picture with nothing attached to it. WebP output arrives without any of it either way.

Why is my converted photo sideways?

Because a phone does not turn the photo when you turn the phone. It stores the picture the way the sensor saw it, plus a note about which way up it goes, and anything that ignores that note shows the photo on its side. That note is applied here before the file is written, and the result is then marked as upright so nothing turns it a second time. If a photo still comes out wrong, switch the rotation setting off and convert it again.

Windows is where this problem comes up most, and the reason is worth knowing: it ships with no decoder for the HEVC data inside a HEIC, so Photos and File Explorer give you a blank icon or an error instead of your picture. That gap is at the operating-system level, which is why a photo that opens fine on the phone that took it will not open on the PC you copied it to.
